About the special treasures stored there in the wine cellar and why her favorite wine is, of course, rosé.

How big is the wine cellar at Terre Blanche Hotel Spa Golf Resort* and what makes it so special?

We are fortunate to have two different wine cellars. One for wine storage for large parties and events, a second with the most beautiful bottles from our wine list. This one our guests can visit for a tasting or choose their favorite bottle there. We have 750 different wine references spread across our seven venues from fine dining to pool bar. Each restaurant has its own special touch and therefore a different focus.


How do you choose the wines and the winery and what is the most appreciated bottle here?

I am fortunate to live in a beautiful wine region and I am able to visit many wineries in person. I try to taste most of the wines. But we also have Petrus and Romanée-Conti, very rare bottles, you don’t just open that.
For me, it’s very important to offer wines from the region: Guests at Terre Blanche Hotel Spa Golf Resort come here to discover Provence. Our chef also uses a lot of local products in his Mediterranean cuisine.
The most prized bottle here (I shouldn’t tell because I want to keep it) is a magnum bottle of Ribera Del Duero ‘UNICO’, Vega Sicilia 1989 in the original wooden case. The quality of the wine is amazing and the label is still perfect. A real treasure for me!



What makes being a sommelière at Terre Blanche special?

Being a sommelière at Terre Blanche Hotel Spa Golf Resort***** is special because the different restaurants have their own character and style. We also have very varied banquet activities from weddings to birthdays or pool parties. It’s a great playground for me as a sommelier! The management trusts us a lot in the wine cellar. It’s nice to build something great together for the future.


We are in the middle of Provence, the Côte d’Azur is not far – which wine is essential for Provençal cuisine? What do you recommend?

Yes, of course! Rosé! The wines from Provence are indispensable for Provençal cuisine. The winemakers here have done amazing things in recent years, so I love integrating these wines into our restaurants: at Faventia*, I do a wine pairing themed “Provençal wine walk” with two different rosés: with Tibouren from Clos Cibonne, a grape grown only in Provence, and with an aged rosé (Vintage 2018 from Domaines des Sarrins). To our guests, this allows me to show that rosé really is a “real” wine.
Born in Nice, I recommend a Bellet. A small appellation above the city that offers not only a fantastic view of the Mediterranean, but also a unique terroir with autochthonous grape varieties, such as Clos Saint Vincent.
